As promised, here is the photo-essay of the craziness last night when the drugs were doing nothing to knock down the fever and everything seemed like a good idea (including doing a velociraptor-walk on the balcony in my glow-in-the-dark boxers complete with sound effects). I decided to make that most sublime of treats… chocolate-covered marshmallows!
I had the marshmallows already to try to make cornflake squares and leftover chocolate chips from a batch of frosted cookies around Halloween and some part of my brain was all, “Oh! Oh! Things that go together!”

Too gooey to eat right away. Stuck in fridge on glass plate, took out this morning:
Ate four for breakfast, staggered around the apartment foaming at the mouth. Final verdict: BLECHHH. My fault for using those leftover milk chocolate chips. Would have been pretty good with semi-sweet or even bittersweet. But chocolate-covered marshmallows is the obvious thing to do when you’re up late and hysterical and your brain is baking, yes?
For some reason I’ve never really cared for marshmallows… Smores, wagon wheels, marshmallow peanut butter squares, peeps, those horrible marshmallow strawberries and bananas—I’ve never been fond of any of them. (I do have a certain tolerance for roasted marshmallows and the hard-as-rock kind in Lucky Charms cereal.)
That said, these look really good for some reason… And I might have to give them a second chance. At least Mark will eat them, if I won’t.
See, I’m the opposite – I’m a total marshmallow ho. I’ve even been known to buy a bag and leave it open for a couple of days before eating them so they’re even chewier.
What I was trying to imitate were the chocolate-covered marshmallows from the Rocky Mountain Chocolate factory. They used bittersweet chocolate and somehow got it to stay on as a thin hard shell. Mine turned out thick and uneven. (But they were damn tasty right out of the fridge, I have to admit. Just a little too sweet.)

I’m a marshmallow ho too, P. The chocolate-and-sprinkle-covered marshmallows were so freaking good, weren’t they? You’re probably right that the milk chocolate chips were the problem – you’d need something less sweet to go with the mouthful of sugar from the marshmallow.
Yes, chocolate and sprinkles were teh awesome. Because the chocolate wasn’t sweet, and the sprinkles added some crunch to contrast with the chewy and the melty. Dang, now I’m getting hungry! I’m going to go get a bowlful of cornflakes.
